Broccoli and white bean meatballs
with a curried carrot and green apple sauce
These 'meatballs' are very easy to make and above all, super tasty. The carrot sauce has a delicious sweet touch from the apple and a nice spice from the curry. You got to love this great combination of flavours!

Instructions

Dissolve the broth in a pot with plenty of boiling water. Cook the tender wheat in the broth for 10 minutes. Drain the water and set aside.

For the meatballs: wash the vegetables. Bring plenty of water to a boil and cook the broccoli florets divided into small bunches for 3 minutes until tender. Drain the water and finely chop the broccoli. Drain the water from the beans and mix them with the broccoli. Mash them with a fork or potato masher until a dough forms. Add the vegetable seasoning, garlic powder, cayenne pepper (save a little to garnish the dish), 2 teaspoons of rice flour and salt and pepper to taste. Spread the dough on a plate for it to cool down. Once the dough is firm and elastic, form small balls and pass them through the rice flour. Heat a tablespoon of oil in a pan and sauté the balls until they brown. Set aside.

For the sauce: peel and grate the carrot and apple. Finely chop the onion and garlic. Heat a tablespoon of oil in a frying pan and sauté the onion, garlic, carrot and curry powder for 3 minutes. Add the apple and cumin powder and let it cook for another minute. Add water to the height of the vegetables and let it cook for 2 minutes. Blend the vegetables to a smooth sauce with a hand blender and let it cook for another 3 minutes. If necessary, add some water to give it the texture of a sauce and season to taste. Add the meatballs to the sauce and cook everything for 2 minutes. Be careful while stirring it, so the balls don't break.
